  1 2-ounce bird's nest 1 quart chicken broth 1/8 teaspoon sherry 1 boned chicken breast, finely chopped 2 teaspoon cornstarch 1/4 cup of water 1 eqq white sesame oil (optional) peanut oil Soak the nest in water overnight. Next day, sprinkle several drops of peanut oil on the nest. Rinse nest with warm, clear water.
Feathers should float to surface, making removal easier. Repeat oil-and-wash treatment until bird's nest is clean. Place bird's nest and 2 cups chicken broth in large bowl. Add sherry and chicken breat. Steam for 1 hour. Transfer mixture to 3-quart saucepan. Add rest of chicken soup and boil for two minutes. Mix cornstarch with water, then add to broth. Bring to boil, turn off heat. Beat in egg white. Sprinkle with sesame oil. Serve hot.
